Apple Pie Cups with Blackberries

The exciting combination of a famous apple pie filling with a touch of blackberries gives this unusual dessert a bit of a vibrant flavor. For the crust:

2 cups all-purpose flour

¾ tsp salt

¾ cup butter, softened

1 tbsp sugar

½ cup ice water

1 x 40-gram scoop Blackbelt Whey Protein Concentrate Apple & Cinnamon

For the filling:

1 medium-sized alkmene apple

½ fresh peach

½ cup blackberries

¼ cup cranberries

2 tbsp all-purpose flour

1 tbsp sugar

½ tsp cinnamon

1 egg yolk, for brushing


Place all the crust ingredients in a food process and pulse until dough is crumbly but holds together when squeezed. Remove from the food processor and place on a lightly floured work surface. Divide in 4 equal pieces and wrap in plastic foil. Refrigerate for one hour.

Meanwhile, place all the filling ingredients in a medium-sized bowl. Toss to combine and set aside.

Preheat the oven to 350 degrees and line some parchment paper over a baking sheet. Set aside.

Roll each piece into 6-inch round discs. Add two tablespoons of the apple mixture at the center of each disc and wrap to form small bowls. Brush each bowl with egg yolk and gently transfer to a baking sheet. Bake for 40 minutes.
