Protein Meatball Pancakes

Salty pancakes with crispy garlic meatball are the base for this interesting meal. Combined with onions, olive oil, and eggs, this meal is hearty enough to be a satisfying lunch or dinner. Simple yet tasty. Add Blackbelt Whey Protein Concentrate Raw Protein Powder and enjoy!

Ingredients:

For the meatballs:

1 lb lean ground beef

2 tbsp parsley, finely chopped

1 x 40 gram scoop Blackbelt Whey Protein Concentrate Raw Protein Powder

1 tbsp all-purpose flour

1 medium-sized onion, finely chopped

2 large eggs

1 tsp garlic powder

1 tbsp extra-virgin olive oil, plus 1 tbsp for frying

½ tsp salt

¼ tsp red chili powder, ground

For the pancakes:

3 large eggs

1 cup all-purpose flour

1 x 40 gram scoop Blackbelt Whey Protein Concentrate Raw Protein Powder

1 ½ cup milk

1 tsp salt

Cooking spray

For the topping:

1 cup Greek yogurt

1 tbsp fresh parsley, finely chopped

¼ tsp salt

1 x 40 gram scoop Blackbelt Whey Protein Concentrate Raw Protein Powder

Preparation:

Combine all meatball ingredients in a large mixing bowl. Mix well with your hands and shape half-inch balls. Refrigerate for 30 minutes before cooking.

Preheat the oil in a large skillet over medium-high heat. Add meatballs and briefly fry for 4-5 minutes. Remove from the heat and set aside.

In a separate bowl, combine alldry pancake ingredients and mix well. Gradually add milk and beat well on high speed using a whisking attachment. Add eggs, one at the time, beating constantly. Continue to beat for 2 minutes or until you get a nice pancake batter. Set aside.

Spray a large, non-stick skillet with some cooking spray. Add about two tablespoons of the pancake batter into the pan and cook for 2 minutes, or until bubbles disappear. Flip and continue to cook for one more minute. Repeat the process with the remaining batter.

Finally, combine all topping ingredients in a mixing bowl. Beat well on high speed until you get a smooth mixture. Drizzle over meatballs and serve with pancakes.
