Hazelnut Protein Cake

This high-protein cake with a hazelnut twist is a perfect option for a simple, yet healthy dessert. Instead of typical, heavy, chocolate desserts, this recipe offers a lean and fluffy topping that melts in the mouth. Ingredients:

For the crust:

7 egg yolks

½ cup powdered Stevia

½ cup milk

½ cup oil

½ cup all-purpose flour

1 tsp baking powder

For the topping:

2 cups powdered stevia

2 x 40-gram scoop Blackbelt Whey Protein Concentrate Vanilla

¼ cup water

7 egg whites

1 cup hazelnuts, toasted

Hot fudge sauce, optionally

Preparation:

First, prepare the crust. In a large mixing bowl, combine egg yolks and stevia. Beat well with a whisking attachment, until foamy. Now add milk, oil, flour, and baking powder. Continue to beat until smooth, for three minutes.

Preheat the oven to 390 degrees. Line some parchment paper over an 11×7 baking sheet. Pour in the batter and bake for 10 minutes, or until set.

Remove from the oven and cool completely.

Meanwhile, combine the topping ingredients in a large mixing bowl. Beat well for 2-3 minutes. Pour over the crust and bake for 5 more minutes.

Remove from the oven and top with hazelnuts and optionally with some hot fudge sauce.
