Coconut Ginger Soup

This thick coconut ginger soup is an entirely new and exciting replacement to your usual soup recipes. Carrots are loaded with different nutrients and help improve overall health. When combined with two scoops of Blackbelt Whey Protein Concentrate Raw Protein Powder, it becomes a nutritious meal that will keep you full for hours.

Ingredients:          

1 lb carrots, peeled and chopped

2 x 40 gram scoop Blackbelt Whey Protein Concentrate Raw Protein Powder

2 cups vegetable stock

1 cup coconut milk

1 medium-sized onion, finely chopped

½ cup celery, chopped

2 garlic cloves, finely chopped

1 tsp ginger, freshly grated

1 tsp turmeric, ground

2 tbsp coconut oil

1 tsp salt

Preparation:

Melt the coconut oil in a large, heavy-bottomed pot over a medium-high heat. Add garlic, onions, and celery. Sprinkle with some salt and stir-fry for 5 minutes, or until translucent. Add carrots and cook for another 10 minutes, stirring occasionally.

Add vegetable stock and coconut milk. Stir in the Blackbelt Whey Protein Concentrate Raw Protein Powder and bring it to a boil. Reduce the heat to low and cook for 15 minutes. Remove from the heat and cool to a room temperature. Transfer to a blender and add ginger and turmeric. Pulse until smooth.
